Education on Natural and Synthetic Dyes in Improving Food Safety Literacy of Students at Darunnaim Pesse Islamic Boarding School

Food safety literacy is an important aspect that needs to be improved, especially among students who tend to choose food products based on appearance, taste, and price without considering the safety of ingredients used. One of the food additives commonly used to enhance the attractiveness of food products is coloring substances, which consist of natural and synthetic dyes. Limited knowledge regarding the characteristics and potential risks of inappropriate synthetic dye use may affect students' ability to select safe food products. This community service activity aimed to improve food safety literacy among students through education on natural and synthetic dyes in processed food and beverage products at Darunnaim Pesse Islamic Boarding School, Soppeng Regency. The activity was conducted through preparation, interactive education, demonstration of natural dye extraction, and discussion sessions. The materials provided included the classification of food dyes, differences between natural and synthetic dyes, health risks of hazardous dyes, and the utilization of natural materials as food coloring sources. The results showed that the educational activity increased students’ understanding of safe food selection and introduced natural dye alternatives derived from local materials. This activity contributes to strengthening food safety awareness through contextual science education in the Islamic boarding school environment.
